T.O.W.N. goes undercover for an evening of international intrigue—an old-school T.O.W.N. dinner reimagined as an eight-course operation, opening with passed "Confidential Bites" and unfolding course by course into the heart of the mission. Every guest is an agent. Every course reveals a new secret. Channeling the sophisticated danger of classic espionage and the playful tension of spy-versus-spy, this immersive experience begins the moment you receive your mission briefing.
Our agents will be circulating with those Confidential Bites at the start of the evening—eat them quickly; the evidence must be destroyed. What follows is a seated dinner crafted by Chef Pringle, licensed to thrill and entirely unredacted. Each plate arrives as its own intel drop—precise, deliberate, dispatched in turn. Flavors disarm, pairings intrigue, and every course pushes the story forward.
The wines are operatives in their own right. Bob Cabrall presents his Troubadour wines alongside selections from our hosts at Thomas George Estates, with additional pours from T.O.W.N Founders Flambeaux & The Harris Gallery Art & Wine Collection—four perspectives, one mission, every glass with a story worth keeping.

Chef Partnership:
Jason Pringle
Chef Jason Pringle is a highly acclaimed, Michelin-trained chef known for a refined yet approachable style that blends classical French technique with the seasonal bounty of Northern California. After building an elite résumé at iconic institutions such as Daniel and Le Bernardin in New York, and Aqua and Michael Mina in San Francisco, Pringle most recently served as the Executive Chef at Montage Healdsburg, where he helped define the culinary identity of its flagship restaurant, Hazel Hill. Currently, he has stepped into a more personal and experimental chapter in Healdsburg with Juju’s, a Moroccan-inspired dinner pop-up where he draws on family recipes to create soulful, world-class dishes. However, beneath the precision of his plating and the warmth of the kitchen, Pringle is now ready to step into his most clandestine role yet: operating as a culinary double agent, where his mastery of elite technique serves as the perfect cover for a mission of flavor-fueled intrigue and high-stakes hospitality.

Bob Cabral
Bob Cabral is a legendary Sonoma County winemaker and a fourth-generation farmer renowned for his mastery of Pinot Noir and Chardonnay. Over a career spanning more than four decades, he is most celebrated for his 17-year tenure at Williams Selyem, where he made history by crafting the first North American Pinot Noir to receive a perfect 100-point score. Named Winemaker of the Year by Wine Enthusiast in 2011, Cabral now focuses on his philanthropic label, Bob Cabral Wines—notably producing the highly acclaimed Cuvée Troubadour Pinot Noir— A resident of Healdsburg, he is known for a minimalist, vineyard-driven philosophy and a deep-seated love of music that often inspires the names and spirit of his most iconic bottles.

Thomas George Estates is a family-owned winery in Healdsburg with deep roots in the Russian River Valley’s viticultural history, born from the 2008 acquisition of the historic Davis Bynum estate, where the region’s first single-vineyard Pinot Noir was produced. Crafting only small-lot, limited-production wines exclusively from its estate vineyards—each expressing the distinct terroir of sites such as Baker Ridge, Cresta Ridge, Starr Ridge, and Sons & Daughters Ranch—focusing on single-vineyard and single-block expressions that highlight complexity and character. Beyond its acclaimed Pinot Noir and Chardonnay, the estate offers an array of unique varietals and blends, immersive experiences, including cave and estate tastings, vineyard tours, and luxury stays.
